Equipment

  • Air Fryer

Ingredients

  • 1 piece of Puff Pastry
  • 3 tablespoons Salted Butter
  • 3 tablespoons Granulated sweetener that measures like sugar
  • 1 tablespoon Ground Cinnamon

For Drizzling on Top

  • 2 tablespoons Cream Cheese
  • 2 tablespoons Powdered Sweetener
  • ½ teaspoon lemon juice optional

Instructions

  • Lay out frozen puff pastry on bench (keep plastic on). Cover and let it defrost for 5 minutes until it loses its stiffness
  • Add softened butter, granulated sweetener and ground cinnamon to a bowl and mix together well so the it resembles a paste.
  • Spread cinnamon mixture over puff pastry, all the way to the edges.
  • Working quickly, start at one side, folding over and forward, rolling into a log.
  • Slice in half with a sharp knife, then slice each half piece into four, so that there are 8 mini rolls in total.
  • Lay each piece flat side down into air fryer and spray lightly with oil if using. Cook for 12 minutes at 180 degrees C/ 350 degrees F.
  • Open air fryer and turn cinnamon rolls over and cook for a further 3 minutes.
  • Remove cinnamon rolls from air fryer onto a rack to cool and make the glaze.
  • Glaze: Add softened cream cheese, powdered sweetener and lemon juice and mix through. Add water a tiny bit at a time, until you get a sauce like consistency, suitable for drizzling.
  • Use a spoon to drizzle on top of each cinnamon roll.

Notes

  1. Granulated Sweetener: I use Lakanto Monkfruit “Brown” and it measures just like sugar.  I prefer using a brown sweetener rather than a white on for this recipe as it adds a slightly difference flavour.  Alternatively you could use stevia or another other sweetener that measures like sugar.
  2. Powdered Sweetener: I use Lakanto powdered sweetener which is similar to icing sugar in Australia.  I buy mine from Woolworths in the baking aisle.
  3. Cream Cheese for Top:  low fat cream cheese works fine here if you are looking to make these as lean as possible
  4. Storage: Store cinnamon rolls in an air tight container in fridge for 2 days.
  5. Glazing: I like to glaze the cinnamon rolls whilst the are sill fairly warm, but not so warm that it just slides right off.
  6. Nutrition is for 1 cinnamon roll.
