This healthier version of General Tso's Chicken features tender, juicy chicken breast coated in a sweet, tangy, savory, and slightly spicy sauce, ready in under 25 minutes.
750grams/1 ½ lb Skinless chicken breast or tenderloin, cubed
¼cupCornstarch (or cornflour)
1tablespoonavocado oil
For the Sauce
1tablespoon avocado oil
1tablespoonminced ginger
3minced garlic cloves
½teaspoonred pepper flakes
½cupchicken stock
5tablespoonssoy sauce
3tablespoonsrice wine vinegar
3tablespoonsMonkfruit sweetener that measures like sugar
1 ½tablespoonshoisin sauce
1tablespooncornstarch or cornflour (for thickening)
For Garnishing
2tablespoonsgreen onions (chopped)
1teaspoonsesame seeds
Instructions
Prepare Chicken: In a bowl add 750 grams /1 ½ lb Skinless chicken breast or tenderloin, cubed and ¼ cup Cornstarch (or cornflour). Toss the chicken until it is fully coated. Set aside.
Cook Chicken: In a saute pan add 1 tablespoon avocado oil over medium heat. After 2-3 minutes and the oil is hot add the chicken. Cook for 4-7 minutes or until the juices run clear. Once cooked remove the chicken and set aside
Cook Sauce base: Add 1 tablespoon avocado oil, 1 tablespoon minced ginger, 3 minced garlic cloves, and ½ teaspoon red pepper flakes, cooking on high heat for 30 seconds to 1 minute.
Add Rest of Sauce Ingredients: Add ½ cup chicken stock, 5 tablespoons soy sauce, 3 tablespoons rice wine vinegar, 3 tablespoons Monkfruit sweetener that measures like sugar, 1 ½ tablespoons hoisin sauce, and 1 tablespoon cornstarch mixed into 2 tablespoons of water to make a cornstarch "slurry". Stir sauce briskly until fully combined and the sauce is thick and glossy. Taste to see if more soy sauce or monkfruit sweetener is needed based on your preference.
Add Chicken: Add the chicken back into the pan and toss until coated with the sauce. Transfer chicken to serving dish and garnish with 2 tablespoons green onions (chopped) and 1 teaspoon sesame seeds. Serve with 2 cups Brown rice, cooked.

Chicken Coating: Ensure the chicken is evenly coated in cornstarch for a crispy texture when cooked.

Adjust Flavor: Taste the sauce before adding the chicken and adjust sweetness or saltiness with more monkfruit or soy sauce as needed.
