These Chewy Amaretti Biscuits are a healthier take on the traditional Italian amaretti, and are made with just 5 ingredients. Firm on the outside and soft and chewy on the inside.
⅓cup+ 1 tablespoon Granulated sweetener that measures like sugarsee note 1
1 ½teaspoonVanilla essencesee note 2
1large Egg
1large Egg white
Extra
Powdered sweetener to dust on topsee note 3
Instructions
Preheat fan oven to 180 degrees C, or 360 degrees F
Add all ingredients into a food processor and blitz until a dough is formed
2 ¼ cups Almond Meal, ⅓ cup + 1 tablespoon Granulated sweetener that measures like sugar, 1 ½ teaspoon Vanilla essence, 1 large Egg, 1 large Egg white
Remove dough from food processor and roll into a ball. Pull apart into 4 equal portions. From each of the 4 portions, make 5 balls so that you have 20 balls in total. Roll each on in powdered sweetener.
Prepare a large baking tray, lined with parchment/baking paper. Arrange the balls on the baking tray and gently press each one to flatten into a round disc about ½ cm thick.
Bake at 180 degrees C, or 360 degrees F for 15 minutes. Remove from oven, cover and let come to room temperature. Lightly dust with powdered sweetener (see note 3)
Notes
Sweetener: In the biscuit dough, I used Lakanto Monkfruit Sweetener “Classic”. This is a granulated sweetener that measures just like sugar and is available from Woolworths and Coles in Australia and from amazon worldwide. Alternatively, you could use any brand of monkfruit, or stevia so long as it measures like sugar.
Flavouring: instead of 1 ½ teaspoons of vanilla essence, you can do 1 teaspoon of Almond essence, and ½ a teaspoon of Vanilla essence.
Powdered sweetener dusting on top: Whilst not essential, it does add a little extra sweetness to the biscuit. I use Lakanto superfine sweetener caster sugar replacement, also available from Woolworths in Australia. If can’t find powdered sweetener, you can make your own by grinding granulated sweetener either in a coffee grinder or mortar and pestle
Storage:Store in an air tight container at room temperature for 5 days.
