Savoury Curried Beef Mince

Ingredients

  • 500 grams Lean beef mince
  • 1 medium brown onion
  • 1 tablespoon Crushed garlic
  • 3 tablespoons Tomato paste
  • 1 cup Tomato Purree
  • ½ cup Beef stock
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons Curry Powder
  • 1 teaspoon salt
  • ½ cup Frozen diced mixed vegetables Note: 1

Instructions

  • Heat a large pot on medium to high heat, add onion and garlic, cooking for 1 minute or until onion turns translucent.
  • Add the mince to the pot, breaking up any lumps with a spatula, stirring until minced beef golden browned.
  • Add the tomato paste, tomato puree, beef stock, curry powder, Worcestershire sauce and salt. Use wooden spoon to stir curry mixture together on medium for 2 minutes.
  • Add the frozen mixed veges (or frozen peas) and cook for another 5 minutes on medium heat.
  • Keep uncovered and let simmer on low for 15 minutes to let the flavours develop into a rich sauce.
  • Stir beef mixture with a spoon and remove from stovetop. Serve with hot buttered toast, mashed potato, or on a bed of rice.

Notes

  1. Curry Powder: this can be made using mild curry powder, hot curry powder, or even red curry paste if that is what you have on hand. For extra heat you can also add in a dash of cayenne pepper or chilli powder. I like using either Keens Curry Powder or Clives of India Curry Powder.
  2. Storage:  Store curried mince in airtight containers in the refrigerator for up to 3-4 days. For longer storage, freeze in labeled, portioned containers for up to 3 months. Thaw overnight in the fridge or use the microwave for a quick defrost before reheating on the stove.
